Loads of Miscellaneous Information

First I know that this is not Slow Cooking Thursday, but I just HAVE to share this recipe. I found it in my slow cooker cookbook and thought I would try it because it looked SO easy! I literally had 5 minutes before I needed to get the kids on the bus yesterday, so I thought I would throw this meal together. It turned out wonderful and we had no leftovers.

Teriyaki Pork Roast

3/4 cup unsweetened apple juice
2 Tbsp. sugar
2 Tbsp. soy sauce
1 Tbsp. vinegar
1 tsp. ground ginger
1 tsp. garlic powder
1/8 tsp. black pepper
3 lb. boneless pork loin roast (halved)

2 1/2 Tbsp. cornstarch
3 Tbsp. cold water

1. Combine apple juice, sugar, soy sauce, vinegar, ginger, garlic powder, and pepper in slow cooker.

2. Add roast. Turn to coat.

3. Cover. Cook on Low 7-8 hours. Remove roast and keep warm.

4. In sauce pan, combine cornstarch and cold water until smooth. Stir in juices from roast. Bring to a boil. Cook and stir for 2 minutes, or until thickened. Serve with roast.

The kids absolutely loved this roast!!! And I loved the easy prep!!!!


Next bit of needless information..... We refinished our table this week!!!! It turned out awesome!! I am so happy! One would think though, that you shouldn't have to refinish a table that is only 2 years old.... We bought this nice oak table from a furniture store when we were waiting for the girls to come home because our other table was too small. Well not long after we got it, we noticed that when we would write on a paper on the table, it would mark up the table. Then not long after that, if we ate fast food on the table, the wrapper would stick to the table and the writing on the wrapper would transfer on to the table! Then not long after that, if we would put a potholder on the table with something hot on it, the potholder would stick to the table and not come off without leaving part of itself on the table! So we borrowed an orbital sander from
Cheri (THANKYOU!!!) and got right to work. The table just got it's 5th coat of polyurethane yesterday afternoon and it looks great! I am so excited!

Finally, not to brag, but I get to go outlet shopping this weekend!!! Oh yeah, I'm so happy, can you see me happy dancing through the computer??;)

I can't wait to see your table, what a pain it must have been before you refurnished it.

I bet your table looks great. Thanks for the recipe - I'll have to try it. I can't see you dancing, but I thought I heard a few joyful yells from your side of town! Have fun.

I'm happy for you that you're able to go shopping too! Tori and I are about to leave for a girl's afternoon out! FUN!! I can't really see you dancing but I think you and Amy K should get together and put on a performance! :)
